Quick Update – Day 13

Time to get personal.

Time to put it ALL out there.

Yeah, I know. Disgusting.

By this time next year that first number will be a one. Mark my words.

Cravings:

I had a small craving today for some meat but I managed to smack it in the face with fresh guacamole. All in all though, I’ve been feeling pretty great. After having a small procedure earlier this week to help clear an ear issue that’s been bringing me down for well over a month – I’m finally feeling like myself again, better though! I haven’t been craving any dairy at all. Nope, not even cheese. Since I haven’t had nearly as much of a problem with angry guts as I usually do, I’m finding that I don’t even want dairy.

Medications:

I’ve cut down taking Prilosec from 2 a day to 1 every other day. My indigestion has almost disappeared and I’m pretty sure if I would lay off the spicy foods I could get rid of it. I haven’t used my prescription face wash, shampoo, and steroid cream in over a week. My face is no longer going back through it’s teenage phase!

Skin:

That’s right, no more oily & itchy skin on my scalp or my face. The stress sores that I develop in various places all over my body have started healing much more quickly and I’ve only seen 2 pop up over the past 2 weeks. Usually I’ve have upwards of 3+ per week that take weeks to heal.

Beans, Beans, The Magical Fruit:

The amount of black beans I’ve consumed over the the past 13 days has taught me that I can play yet another instrument! (This gas is LEGIT. Recently I’ve heard octaves I didn’t know I could hit!)

Lunch time! That might just be the most filling lunch I’ve had since I started! What an amazing treat. Sure, I missed the cheese, but the black beans did a great job of adding protein and flavor. Delicious.

Go for the crunch wraps. Trust me. So good. Add a bit of mild sauce and guacamole and you’ll be set!

Tofu?!

This was lunch today. Tokyo Joe’s. I really love their bowls so I decided to try one with tofu. Hmmm. Everything was super tasty except I just couldn’t quite make myself love the tofu chunks. They looked like chicken, but when you stab it on your fork it just feels like you’re stabbing firm banana pudding.

I think the key to this might be that I should add more foods that are crunchy. The water chestnuts were the only things with a real “bite” factor in this bowl. I felt like I was just eating mush and I found it a bit unsettling that avocado was much more firm than my tofu “chicken” chunks. (Okay, maybe more than a bit.)

I’m still not sold on the whole tofu thing. I think I’m gonna have to keep trying different dishes with this stuff. Does anyone have any tips on how to cook it where I might actually learn to love it?

Day 9.

It’s becoming a true effort to find full meals that are convenient. I just have to keep reminding myself that this is not a carbohydrate or junk food adventure. These things are only making the heart disease worse. I have GOT to be more disciplined and start cooking dinner at home. I haven’t had a meat craving since last week! That’s pretty exciting, right? (Although watching my husband put some sausage biscuits in the microwave this weekend just about broke me… *Drool*)

If nothing else has come from these past 8 days, I can say I’m at least trying new food! I’ve never been the bold & adventurous type when it comes to trying new cuisines, but here lately I’m really enjoying Thai food! I never would have thought I would have liked it, but by changing the way I eat, I am sometimes forced to try new things when there aren’t any other selections available. It’s opened my taste buds to a whole new genre of flavors. I even tried the flaky fish food cheese substitute powder! Yeah, that still grosses me out to think about. I put it on my popcorn for a small little morning snack and guess what? IT WAS ACTUALLY REALLY GOOD! Nutritional yeast for the win!

I challenge everyone reading this to try something new today. Step outside of your comfort zone. You’ll be surprised at what all is out there!

It still astounds me to see all the support I’m getting from people I would have never thought would be standing by my side during this. It also never ceases to amaze me when people who should be supporting me send rude comments or texts about how terrible vegans are. Again, I am not a vegan. I’ve sent my husband out to acquire some Beyond Meat. I’m hoping he finds some today so that I can start making some healthy dinners as well. I can’t wait to try it.
